Pak Choi Soup


  • 8 cups broth, water
  • 10 large fresh shiitake mushrooms, stemmed, sliced
  • 2 tablespoons minced peeled fresh ginger
  • 2 tablespoons miso
  • 1 tablespoon tamari
  • 1 tablespoon sesame oil
  • 1/4 teaspoon chili oil
  • 3 cups thinly sliced pak choi
  • 4 teaspoons rice vinegar
  • 2 green onions, sliced


Bring broth, mushrooms and ginger to boil in large pot. Reduce heat and simmer 3 minutes. Add sesame oil, tamari and chili oil, simmer for 2 minutes. Add pak choi , simmer until  tender, about 2 minutes. Let cool a minute. Stir in rice vinegar, miso. Serve with fresh green onions.
